Happy Monday everyone! Wait is Happy Monday a thing? Well ok if it’s not let’s make it a thing lol. Today I decided to make a really easy yet cool dinner. We are making some Simple Chicken Chimichangas. Go ahead I dare you say that 5 times really fast lol. This is a cool meal they will wow the whole family with out putting a lot of time and work into it I used a rotisserie chicken and shredded that to make it even faster. How to Make Simple Chicken Chimichangas
Ingredients
- 2 Cups Chicken Cooked and Shredded
- 1 Tbsp. Chili Powder
- 1/2 tsp. Cumin
- 1/4 tsp. Paprika
- Salt
- 1/2 Cup Salsa
- 2 Cups Colby Jack cheese Shredded
- 2 oz. Cream Cheese Softened
- 2 Tbsp. Green Onion Diced
- 1 15oz. Can Refried Beans
- 4 or 5 Burrito Size Tortillas
Instructions
- Preheat your oven to 400˚F.
- In a large bowl mix together the shredded chicken, chili powder, cumin, paprika, salsa, shredded cheese, cream cheese, green onions and salt to tasteq
- Spoon about 2 Tbsp. of refried beans into the center of a tortilla, add about 1/2 to 3/4 Cups of the chicken mixture on top of the beans. Fold the tortilla over covering the filling, then fold in the sides, finish by rolling.
- Place the chimichanga into the baking pan seam down. Brush a little olive oil over each of the chimichangas and place in the oven to bake for about 20 minutes or until the tortillas hit the perfect golden brown.
- Top with a little extra salsa and serve!
