Smoked Gouda and Sweet Potato Casserole

Here we are closing in on one of the biggest food holiday’s in the U.S. time to stat planning our menus. I love this time of year because I get to try so many new recipes and just try new twists on some classic recipes. This time I am making a great side dish. We are making a Smoked Gouda and Sweet Potato Casserole! This is a cool little dish you have to try if you like having a sweet potato side. Smoked Gouda and Sweet Potato Casserole Recipe

Total Time 1 hour 15 minutes

Ingredients
  

  • 4 Cups Sweet Potatoes
  • 3 Cups Cauliflower Florets
  • 1 Egg
  • 3/4 Cup Smoked Gouda Shredded
  • 3/4 Cup Pecans
  • 1 tsp. Cinnamon
  • 1/2 tsp. Olive Oil
  • 1/8 tsp. Cayenne
  • Salt
  • Pepper

Instructions
 

  • Preheat your oven to 375˚
  • Spread cubed sweet potatoes on a baking sheet, toss in a little olive oil, salt and pepper. Place in oven and bake for 20-25 minutes.
  • Add cauliflower florets to a sauce pan, cover in water and cook until cauliflower is tender about 15-20 minutes.
  • Puree both the potatoes and cauliflower until smooth. Add egg, cheese, cinnamon, salt and pepper.
  • In a small owl toss together pecans with olive oil, and cayenne.
  • Put potato mixture into a baking dish, top with pecans and bake for 25 minutes.
