Yup, you heard me right a smoked sausage soup.. well Smoked Sausage Potato Soup Recipe to be exact. This is a really cool and fun recipe that is something a little bit different when it comes to soup. So go ahead add this awesome soup to your fall soup line up and I know you guys will love it!

Smoked Sausage Potato Soup Recipe
Ingredients
- 1 Tbsp. Butter
- 2 Tbsp. Olive Oil
- 1 Onion diced
- 3 Garlic Cloves Minced
- 1 Smoked Sausage
- 4 Cups Kale Roughly Chopped
- Salt
- Pepper
- 1/2 tsp. Rosemary
- 1/2 tsp. Thyme
- 3 Cup Potatoes Cubed
- 32 oz. Chicken Broth
- 2 Cups Milk
Instructions
- Melt butter and heat olive oil in a large soup pot over medium-high heat.
- Add diced onions, garlic, sliced smoked sausage rounds, kale, salt, pepper, rosemary and thyme; stir to combine and cook for 8 minutes, stirring occasionally.
- Stir in potatoes.
- Add chicken broth and soy milk; bring to a boil.
- Reduce to a simmer and continue to cook for 10 to 12 minutes, or until potatoes are fully cooked and tender.
- Remove from heat.
- Taste for seasonings and adjust accordingly.
