Time for one of my Daughters favorite desserts. A really simple and great tasting Strawberry Shortcake from scratch. I am doing these as mug cakes for a couple of reasons. 1. It’s just a little bit more fun to make mug cakes then slave over a huge bowl baking all day. 2. My daughter just loves mug cakes because she can pop them in the microwave and make them herself which really makes her happy lol.

Strawberry Shortcake Mug Cake Recipe
Ingredients
Topping
- 5 – 6 Strawberries
- 1 Tbsp. Lemon Juice
- 1 tsp. Granulated Sugar
Cake
- 1 Large Egg
- 1/2 tsp. Vanilla Extract
- 3 Tbsp. Buttermilk
- 1/4 Cup Granulated Sugar
- Salt
- 1/2 Cup Whip Cream
- 1/4 Cup Self Rising Flour

Don’t have self rising flour? Here is how to make it.1 cup all purpose flour, 3/4 tsp. baking powder, pinch of salt!
