Sweet Jalapeño Pineapple Chicken

I was in the mood for some good sweet and spicy food, so figured why not roll that into my prep for the big game. I am making some Sweet Jalapeño Pineapple Chicken. I used some store-bought popcorn chicken to make this one even quicker, you can use anything you want, wings, strips, whatever ever it all works great. This is the perfect little appetizer. Awesome Sweet Jalapeño Pineapple Chicken

Course Appetizer, bbq, Gameday, Launch

Servings 4 Servings

Ingredients
  

  • 1-1/2 lb. Breaded Chicken I used popcorn
  • 3/4 Cup Sweet Chili Sauce
  • 1/3 Cup Pineapple Juice
  • 1/2 Jalapeño Seeded, and Diced
  • 1 8 oz. Can Pineapple Slices, Drained

Instructions
 

  • Cook chicken per packages instructions.
  • While the chicken cooks in a small sauce pan combine sweet chili sauce, pineapple juice and jalapeño. Bring to a boil, reduce the heat and allow to simmer for about 5 to 10 minutes until it slightly thickened slightly. Set 3 tablespoons of sauce aside.
  • Bruse sliced pineapples with the 3 tablespoons of sauce and grill on each side of the slice for a couple of minutes.
  • Toss chicken in the remaining sauce and serve with grilling pineapple.
