I haven’t done one of my healthier recipes in a long time. Even more I haven’t done a healthy breakfast in like… well forever! So I decided to do a video on my Sweet Potato Bacon Fritters. This is a cool little breakfast side that will give you those all important carbs to start your day off right. Let’s be honest Sweet Potatoes are simply … AWESOME (come on you knew that was coming) and totally fun to work with. So go ahead scramble up some eggs make these fritters and enjoy this cool little breakfast =)

Sweet Potato Bacon Fritters Recipe
Ingredients
- 6 Bacon Strips Crumbled
- 2 Medium Sweet Potatoes Peeled
- 3 Green Onions Chopped
- 2 Eggs
- 3 Tbsp. Coconut Flour
- 1 tsp. Paprika
- Salt
- Pepper
Instructions
- Fry bacon until crispy, remove from pan but leave bacon fat in the pan, crumble bacon.
- Peel and grate Sweet Potatoes. Place shredded potatoes in a medium bowl.
- Add crumbled bacon, chopped green onions, whisked eggs, Coconut Flour, salt and pepper to bowl. Mix everything together until completely combined.
- Scoop roughly 1/4 Cup of mixture and place on parchment paper and gently flatten so they are about 3/4″ thick.
- Heat 1/4 Cup of olive oil mixed with the remaining bacon fat on Medium-Low.
- Cook fritters in heated skillet for about 3 minutes per side.
