Taco Stuffed Potatoes

Here we are on the last day of January 2022, how was everyone’s start of the year. Today I am doing one of those fun recipes everyone loves. You know the whole let’s stuff something into something type of recipe lol. This time I am making some Taco Stuffed Potatoes! Seriously making tacos inside of a baked potato!!!! This one is easy to tweak and change to whatever your favorite toppings are for tacos. Honestly, this would be a cool little get-together food, you know instead of a taco bar boom! How to make Taco Stuffed Potatoes

Total Time 1 hour 20 minutes
Course Dinner, Gameday, Lunch, Main Course
Cuisine American, Barbecue
Servings 6 Servings

Ingredients
  

  • 6 Russet Potatoes
  • 1 lb. Ground Beef
  • 1 oz. Taco Seasonings
  • 1/2 Cup Water
  • Any Taco Toppings You Like!

Instructions
 

  • Preheat the oven to 400˚F. Wash off your potatoes, and poke holes in each with a fork. Wrap the potatoes in foil and bake for an hour.
  • Heat a skillet/pan over a medium heat, add in the ground beef breaking it up and browning. Once there is no pink left drain and return to the pan. Add water and taco seasoning, and allow to simmer for about 10 minutes.
  • Once potatoes are done careful unwrap them, split them length wise along the top and fill with taco meat. Top with All of your favorite ingredients, I used some lettuce, cheese, salsa, and guacamole.
