If you guys have followed me for anytime at all you know I love a great soup when it is cold out. Well it is starting to get there, chillier and chillier all the time lol, so it’s time to break out all my awesome soup recipes! Today’s is a cool little Tex Mex Soup. This is a fun little soup with an awesome flavor that is an easy recipe to make, and one that will be loved by the family. I know you guys will love adding this bad boy into your soup rotation, so go ahead and give it a try and let me know what you think of it!

Tex Mex Soup Recipe
Total Time 45 minutes mins
Ingredients
- 1 lb. Ground Beef
- 1 Onion Diced
- 2 Garlic Cloves Minced
- 1 Packet of Taco Seasoning
- 1 Can Rotel Tomatoes and Green Chiles
- 1 Can Black Beans Drained and Rinsed
- 1 Can Corn Drained
- 28 oz. Pckg. Potatoes O’Brian w/ Peppers & Onions
- 4 Cups Chicken Broth
- 4 Cups Milk
- 8 oz. Cream Cheese
- Cilantro to Taste Chopped
- Salt
- Pepper
Instructions
- Brown ground beef with onion.
- Add garlic and cook for 2 minutes more. Drain off excess grease.
- Add taco seasoning, rotel, black beans, corn, potatoes, chicken broth and milk. Bring to a boil then reduce to a simmer, covered for 20 minutes.
- Stir in cream cheese and fresh cilantro. Salt and pepper to taste. Serve topped with shredded cheese, sour cream and diced jalapeno for the ones that like it Spicy! Enjoy!
Notes
If you want to make it in the Crock pot you can!!
Brown ground beef with onion. Drain and add to crock pot along with garlic, taco seasoning, rotel, black beans, corn, potatoes, chicken broth, milk and cream cheese. Cover and cook on low for 5-6 hours. Season with salt and pepper to taste. Serve topped with lots of cilantro, shredded cheese, sour cream and diced jalapeno for the ones that like it Spicy! Enjoy!
