HAPPY FRIDAY!! Wow this has been a heck of a week. It was hectic over here in the Rican household. Well I am sure most families have a pretty hectic lifestyle during the week (part of why I started the channel lol easy cooking for real people lol) Anyway this Twice Baked Potato Casserole fits right into that busy family lifestyle while still giving you and Awesome dish with dinner! Twice Baked Potato Casserole Recipe
Ingredients
- 1/2 lb Bacon Chopped
- 6 to 8 Russet Potatoes
- 2 Sticks Butter Softened
- 1 Cup Sour Cream
- 1 Cup Milk
- 1-1/2 Cup Cheddar Cheese Shredded
- 2 Green Onions Diced
- Salt
- Pepper
Instructions
- Preheat oven to 400˚. Wash off potatoes, wrap in aluminum foil and place on a baking sheet. Bake potatoes for about 40 minutes to an hour.
- While potatoes are cooking, make your bacon.
- Once potatoes are done cooking reduce heat to 350˚ .
- Carefully unwrap potatoes and quarter them. Place in a large bowl. Add 2/3 of your bacon, butter, sour cream, milk, 1 cup cheese, salt and pepper to taste.
- Mash until they are nice and creamy. Transfer to a baking dish, top with the remaining cheese and bacon.
- Place in the oven and back for another 20 minutes. Top with diced green onions and serve.
