So this is it! The last Pancake of the Week for 2019. Wow this year has flown by considering this is the 39th pancake. I can’t believe I have made this many lol, only 11 more pancakes left until we hit 50 and switch it up to something else. Anyway though, this week I am closing out 2018 with Vanilla Pancakes with a Pear Compote. This is an easy yet great tasting little breakfast. I know I say that a lot lol, but let’s be honest here I try to keep things as simple as possible on recipes. I don’t like the overly complex. Vanilla Pancakes w/ Pear Compte
Ingredients
- 2 Cups Flour
- 2 Cups Milk
- 2 Eggs
- 1/4 Cup Sugar
- 1 Vanilla Bean Seeded
- 3 Tbsp. Butter
- 2-1/2 tsp. Baking Powder
- 1 tsp. Vanilla
- 1/2 tsp. Baking Soda
Pear Compote
- 3 Pears Peeled & Diced
- 3 Tbsp. Sugar
- 1 Tbsp. Butter
- 1 Tbsp. Water
- 1/4 Cup Brandy
Instructions
- In Large bowl whisk together flour, baking powder, baking soda, sugar and salt.
- In a medium bowl mix milk, eggs, vanilla bean and vanilla extract. Pour the wet into the dry and mix until combined.
- Heat pan/skillet over medium heat. Add in batter 1/4 cup at a time and cook until golden brown on both sides, about 3-4 minutes each side.
- While pancakes cook, heat a small pan/skillet over medium heat. Melt butter for the compote.
- Add pears and cook until they become soft about 5 minutes. Add all the other compote ingredients. Cook for about 5 minutes until most of the moisture evaporates off.
