Vodka Rigatoni

Hey guys happy Monday. Here were, next week is Christmas is next week!! Man is this year flying by of what? Today I decided to throw down with a simple yet cool dinner for the whole family. We are going to make a simple Vodka Rigatoni. This one doesn’t take a lot of time, and not much work is needed but the reward is one heck of a meal I know you will love. How to Make Vodka Rigatoni

Total Time 34 minutes

Servings 4 Servings

Ingredients
  

  • 3 Tbsp. Butter
  • 1 Shallot Minced
  • 2 Garlic Cloves Minced
  • 1/2 Cup Tomato Paste
  • 1/2 tsp. Crushed Red Pepper Flake
  • 2 Tbsp. Vodka
  • 16 oz. Rigatoni Cooked
  • 1/2 Cup Heavy Cream
  • 1/2 Cup Parmesan Grated
  • Salt

Instructions
 

  • Cook rigatoni as per boxes directions and set aside.
  • In a large skillet, melt butter over a medium eat. Add shallots and garlic and stirring frequently allow to cook until the onions have softened and garlic is fragrant. About 4 or 5 minutes.
  • Add in the tomato paste and red pepper flake allowing to cook another 5 minutes stirring frequently. Add in the vodka and stir until everything is completely combined. Make sure to scrape any bits on the bottom of the pan.
  • Add in your Heavy cream and about 1/4 Cup of water stirring to combine. Add in half of your parmesan cheese and stir until melted. Turn off the heat and add your cooked pasta stirring so it is completely coated. Add remaining parmesan cheese and serve.
