Portion the beef into four 4 oz. balls, salt and pepper them.
Heat the griddle over high heat, once heated place beef onto griddle, smash down and place 1 tortilla on each burger patty. Allow to cook 3-4 four minutes.
Flip the burger over so now the tortilla is on the griddle, place one slice of cheese on each and allow to cook for a couple minutes until the cheese is melted.
