Chop and cook bacon to desired crispness in pan over medium heat. Remove bacon from pan and set aside. Leaving grease in the pan.
Add diced onion and cook until softened, about 5 minutes.
Add ground beef, breaking it up and brown it all the way through.
Add in ketchup, tomato paste, Worcestershire sauce, dijon, and beer. Stir until combined and cook until it thickens to where you like it. (I let mine go about 10 minutes)
Add in cubes of cheese and bacon. Stir in and allow to sit with the heat off for about 5 minutes.
