Add vegrtable oil to griddle and spread it around with your spatula. Saute chicken in the hot oil tossing occassionallyuntil the chicken is cooked all the way through. Push it to the cooler side of the griddle.
Add Peas and carrots, sauting until they are soft, about 5 minutes. Then move to the cool side and add the eggs and scramble. Again move them over to the cooler side.
Last add the rice on the the griddle, with the sesame oil, soy sauce, salt and pepper. Saute rice for about 5 minutes until heated through and browned. Then mix everything together and serve!
