Prepare the Gnocchi per the package instructions.
Preheat your oven to 350˚F. In a large sauce, melt the butter over a medium heat. Whisk in the flour and continue to whisk allowing to cook for about 2 minutes.
Add in the milk a little at a time whisking constantly. Allow to cook for about 8 to 10 minutes stirring frequently until it begins to thicken up.
Remove from the heat and add in the cheese, salt, pepper, green onion, and garlic powder. Stir until the cheese is melted and all ingredients are completely incorperated.
Stir in the sour cream, and then add in the cooked gnocchi. Mix together until gnocchi is completley coated.
Transfer to a baking dish, top with some additional shredded cheese. Bake for about 30 minutes until the cheese is completely melted.
Add the bacon and some extra green onion and serve!
