In large bowl mix together ground chicken, Italian seasoning, salt pepper, breadcrumbs, parmesan cheese, egg and 1 Tbsp. of Olive Oil.
Once fully combined make into 16 small meatballs (4 per sandwich). Heat second Tbsp. of oil in pan/skillet.
Brown meatballs on all sides and set aside once done.
In same pan over low heat add butter and heavy whipping cream. Once fully mixed allow to simmer for about 2 minutes. Mix in garlic, Italian seasoning, salt and pepper.
Add meatballs into the pan/skillet, cover and allow to simmer for about 10 minutes.
Add in parmesan cheese into meatballs and sauce, and allow to go another couple of minutes.
Notes
I made toasted rolls, for this all I did for this was butter my rolls and allowed them to toast in my broiler for a couple of minutes.
