Bring a pot of water to a boil, add about 1 Tbsp. of olive oil. Place tortellini and cook for about 6 minutes strain and run under cold water to stop from cooking.
Place tortellini and mozzarella into a bowl and coat with Italian dressing. Cover and place in the refrigerator for about an hour.
Thread all the ingredients on to 6 Wooden Skewers, cover and place back in the fridge for at least 1 hour and up to over night.
Drizzle a little balsamic and basil on top and serve.
