Pre-heat oven to 375˚.
Wash off potatoes, then drizzle with olive oil, salt and pepper. and bake for an hour.
Cut the tops off of the potatoes, and scoop out the inside and put filling in a bowl.
Mix filling with cream cheese, garlic powder, butter, 3/4 of the cheddar cheese, bacon, jalapeños, salt and pepper to taste.
Scoop filling back into the potatoes, top with remaining cheddar, bacon and jalapeño.
Place back in the oven for another 15 minutes, until cheese is nice and melty
