Bring a large pot of water to a boil, Add about 1 tablespoon of salt to the water and add in the yuca. Cook until fork tender, about 15 to 20 minutes.
Drain the yuca and remove the woody stems. Place in a bowl, salt and pepper to taste and mash until smooth.
Take about 2 tablespoons of mashed yuca and place it in your palm. Place a cheese cube in the center and pinch the yuca shut forming a sealed ball.
Heat about 1/2 inch of oil in a pan over high heat, add yuca and cook for about 1 to 2 minutes per side until golden brown. Remove from oil and set on paper towel.
Microwave guave paste and vinegar until the the paste is melted. Mix together until it is the consistancy of BBQ sauce.
Dip fried yuca in the sauce and enjoy!
