Sopa de Pollo / Puerto Rican Chicken Soup Recipe

Ingredients
  

  • 2 Chicken Breasts
  • 3 Chicken Thighs skinned and de-boned
  • 4 Garlic Cloves
  • 2 Potatoes cut in large chunks
  • 3 Carrots peeled and chopped
  • Cilantro
  • 1/2 Cup Sofrito
  • 1 tsp. Oregano
  • 2 Tbsp. Chicken Bouillon
  • 1 Packet Sazon
  • Noodles
  • 10 cups water

Instructions
 

  • Skin and de-bone your chicken and cut it into small chunks. Bring water to a rolling boil on your stove top and add the chicken into it, I add the bones from the thighs also to give it that extra flavor. Let the chicken cook on a low heat for about 45 minutes.
  • Stir in your garlic, carrots, cilantro, sofrito, oregano, bouillon, and sazon allow to cook for another 10 - 15 minutes and then add your potatoes (you don't want them to over cook and turn into a mush) allow this to go for another 10 -15 minutes.
  • Stir in your noodles and allow to cook for about another 5 or so minutes until the noodles are soft.
