In a large bowl mix all of the ingredients together for the filling.
Place about 1 Tbsp. of filling in the center of a wonton wrapper, using your finger apply water to the edges of the wonton and seal with a second wonton.
Once all wontons are done bring a large pot of water to a boil, and boil ravioli for about 3 to 4 minutes. You don't want them to go long so they don't get mushy.
For the sauce cook chopped bacon in a pan. Once bacon is crisp remove it from the pan leaving about 2 Tbsp. of the bacon fat in the pan. Add in the shallots and allow to cook for a couple minutes.
Next add in garlic, cooking until fragrant, add all the seasonings. After about a minute slowly add wine, allowing to simmer for about a minute. Add in corn, water and cream. Mix together and allow to simmer until it thickens.
Serve ravioli topped with a little parmesan and sauce.
