In Large bowl whisk together flour, baking powder, baking soda, sugar and salt.
In a medium bowl mix milk, eggs, vanilla bean and vanilla extract. Pour the wet into the dry and mix until combined.
Heat pan/skillet over medium heat. Add in batter 1/4 cup at a time and cook until golden brown on both sides, about 3-4 minutes each side.
While pancakes cook, heat a small pan/skillet over medium heat. Melt butter for the compote.
Add pears and cook until they become soft about 5 minutes. Add all the other compote ingredients. Cook for about 5 minutes until most of the moisture evaporates off.
