Corned Beef and Cabbage Sliders

It’s getting towards that time of year guys.. You know wear green, do a pub crawl.. You know what I am talking about, St. Patrick’s Day! So what better little dish for a St. Patty’s party then some Corned Beef and Cabbage Sliders! These things are freaking amazing! Add the Guinness Mustard on them and Oh My god you are completely set with a great tasting little slider, but that’s not all (Now I sound like an infomercial lol) The vegetables this makes, make the perfect little side. So go ahead make these up, give every one a couple of sliders and a side of veggies and you are ready to go. Plus you will have plenty of Guinness left over to crack a cold when to go along with the recipe!

Corned Beef and Cabbage Sliders

Ingredients
  

  • 1 Corned Beef Brisket w/ Spice Packet
  • 4 Cups Water
  • 2 Tbsp. Sugar
  • 2 Tbsp. Apple Cider Vinegar
  • 1/2 Large White Onion Chopped
  • 1/2 Cup Carrots Chopped
  • 1/2 Cup Celery Chopped
  • 1/2 Cup Dijon Mustard
  • 2 Tbsp. Honey Mustard
  • 2 Tbsp. Guinness Beer
  • 1 tsp. Brown Sugar
  • 12 King Hawaiian Rolls
  • 1 Cup Coleslaw

Instructions
 

  • Place water, sugar, and vinegar in a large slow cooker on high heat. Add brisket and spice packet to mixture. Place potatoes, carrots, onion, and celery on all sides of brisket. Cook on high for 4 hours.
  • Whisk together both mustards, Guinness, and brown sugar. Set aside.
  • When brisket is fully cooked, slice into 1/4 inch slices.
  • Stack 3-4 brisket slices on bottom half of bun, topped with coleslaw. Spread mustard on top part of bun to complete your slider. Serve with the veggie mixture.
