First I would like to say I am sorry this one is a day late, my son had back to back wrestling meets on Friday and Saturday as well as my office Christmas party. Heck as I am typing this up he is down stairs with all his friends having a giant study group for finals lol. Anyway on to the task at hand! Pancake of the Week! This week I am doing something a big Christmasy, I am throwing down with some Gingerbread Pancakes! You know this is a fun little pancake that adds that festive spirit to your breakfast table and you guys will totally love this one! Gingerbread Pancake Recipe
Ingredients
- 2 Cups Flour
- 1-1/4 Cup Water
- 1/2 Cup Molasses
- 2 Tbsp. Butter Melted
- 2-1/2 tsp. Ginger
- 1-1/2 tsp. Cinnamon
- 1-1/2 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1/4 tsp. Nutmeg
- 1/4 tsp. Ground Cloves
- 2 Eggs
- salt
Instructions
- In medium bowl whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg and cloves.
- In separate mixing bowl whisk together water, molasses, and eggs and melted butter. Pour wet mixture into dry and mix until combined.
- Heat pot or griddle over medium flame. Using about 1/4 cup of batter at a time pour into heated griddle until completely cooked. About 3-4 minutes per side.
