Happy Monday everyone. Hopefully everyone had a great weekend! We are jumping right into the week with an AWESOME recipe. I am making a Chicken Alfredo Meatball Sandwich! Seriously we are taking that typical meatball sandwich and going completely next level. This is something that you can make for the family for dinner for or the crew hanging out for game day. I mean the Super Bowl is coming up ( who do you have Pats or Rams let me know) I think this would be pretty darn cool to serve up for that lol. Anyway I know you guys will give this one a try, when you do make sure to take a pic and post it to my Facebook page.

Chicken Alfredo Meatball Sandwich Recipe
Ingredients
- 2 Cups Parmesan Cheese
- 1-1/2 Cup Heavy Whipping Cream
- 1/2 Cup Butter
- 2 Garlic Cloves Minced
- 1/3 tsp. Italian Seasoning
- Salt
- Pepper
Sandwich:
- 1 lb. Ground Chicken
- 1 Egg
- 3/4 Cup Panko Breadcrumbs
- 1/2 Cup Parmesan Cheese
- 2 Tbsp. Olive Oil
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Onion Powder
- 1/2 tsp. Italian Seasoning
- Salt
- Pepper
- 4 Hoagie Rolls
Instructions
- In large bowl mix together ground chicken, Italian seasoning, salt pepper, breadcrumbs, parmesan cheese, egg and 1 Tbsp. of Olive Oil.
- Once fully combined make into 16 small meatballs (4 per sandwich). Heat second Tbsp. of oil in pan/skillet.
- Brown meatballs on all sides and set aside once done.
- In same pan over low heat add butter and heavy whipping cream. Once fully mixed allow to simmer for about 2 minutes. Mix in garlic, Italian seasoning, salt and pepper.
- Add meatballs into the pan/skillet, cover and allow to simmer for about 10 minutes.
- Add in parmesan cheese into meatballs and sauce, and allow to go another couple of minutes.
