Apple Upside Down Cake

We are coming up on that fall season again, that means it’s time to start digging into my stockpile of apple recipes. My daughter loves to go apple picking and that always leaves me with tons and tons.. well and tons of apples. So I had to learn a lot of ways to make apple based recipes. I mean one can only eat so much straight apple pie lol. With that said today’s apple recipe is an Apple Upside Down Cake. It is a little bit different way to make an apple based dish that isn’t too difficult and tastes just as great as you need it to! So go ahead and give this one a shot!

Apple Upside Down Cake Recipe

Prep Time 25 minutes
Cook Time 35 minutes
Total Time 1 hour 5 minutes
Servings 8

Ingredients
  

  • 1-1/2 Cups Flour
  • 2 tsp. Baking Powder
  • Salt
  • 3/4 Cup Milk
  • 1/2 Cup Honey
  • 1 tsp. Vanilla
  • 1/2 Butter Softened
  • 1 Cup Brown Sugar
  • 2 Medium Apples I used Granny Smiths, Cored and Cut
  • 1/2 Cup Halved Pecans
  • 2 Eggs

Instructions
 

  • PreHeat oven to 350 degrees.
  • Stir together flour, baking powder, and salt in medium bowl. In second bowl whisk together milk, honey and vanilla.
  • Place 1/4 cup of melted butter in 9″ square baking pan. Stir in 1/2 Cup of brown sugar. Arrange apple slices in mixture and sprinkle pecans over apples.
  • In large bowl beat the remaining 1/4 Cup butter, gradually add the remaining brown sugar and beat until light and fluffy. Add in eggs and beat for about a minute. Add in flour mixture and milk mixture alternating while beating, until completely combined. Pour over apples in baking pan.
  • Bake for 35 to 40 minutes or until toothpick comes out clean. Allow to cool on wire rack for 5 minutes then invert onto serving plate.
