Hey everyone! Time for another awesome yet simple dinner idea. You know me I like easy.. I mean REALLY easy. That’s just what these Cheesy Enchilada Meatballs are. Really freaking easy. With very little work and a pretty simple shopping list, I mean come on you probably have half of this stuff sitting in your kitchen right now already and if not you have it on your shopping list every week. I mean what one or two things are something you may not always have. So this becomes not only simple and fast but easy on that pocket book.I know you guy will totally love this one, so when you do make it make sure to take a pic and post it to my Facebook page!

Cheesy Enchilada Meatballs Recipe
Ingredients
- 10 oz. Enchilada Sauce
- 1 lb. Ground Beef
- 2 Eggs
- 2 Cups Cheddar Cheese Shredded
- 3/4 Cup Breadcrumbs
- 1 tsp. Chili Powder
- 1 tsp. Oregano
- 1/2 tsp. Onion Powder
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Cumin
- 1/2 tsp. hot Sauce
- Salt
- Pepper
Instructions
- Pre-heat oven to 350˚.
- In large bowl mix together ground beef, 1/4 cup enchilada sauce, breadcrumbs, eggs, onion powder, garlic powder, oregano, cumin, chili powder, hot sauce, salt and pepper.
- From meatballs and place into a baking dish.
- Pour remaining enchilada sauce over meatballs, cover with a piece of aluminum foil and bake for 30 minutes.
- Uncover top with cheese and bake another 10 minutes, until cheese is melted.
