Sorry, this one is late all. Work has been SUPER hectic and I am busting it to just try and keep up. Today I am making a super simple dinner that takes next to no work but everyone will fall in love with, Chorizo & Red Pepper Gnocchi. Also easy to tweak too! If you like different cheeses you can do a three-cheese, or just switch out to your favorite type. I know you will fall in love with this one so go ahead and try it. How to Make Chorizo & Red Pepper Gnocchi

Total Time 45 minutes
Course Dinner

Servings 6 Servings

Ingredients
  

  • 1 Red Bell Pepper Chopped
  • 1 Red Onion Chopped
  • 2 Cups Cherry Tomatoes Halved
  • 1/2 tsp. Red Pepper Flake
  • 1 tsp. Oregano
  • 16 oz. Potato Gnocchi
  • 5.2 oz. Chorizo Chunked Up
  • 1/2 Cup Mozzarella Cheese Shredded
  • Basil for topping

Instructions
 

  • Preheat your oven to 425˚F, and prepare a 9"x13" casserole dish.
  • Place red pepper, onion, and tomatoes into your baking dish. Drizzle with olive oil and season with red pepper flake, oregano, salt, and pepper. Toos and place in the oven to roast for about 15 minutes.
  • Remove the baking dish from the oven, stir in the gnocchi, chorizo, into the roasted vegetables. Top with the mozzarella cheese and bake for 20 minutes. Remove from the oven top with the basil and serve.
