Every once in awhile I like to trough a recipe out there that is pretty good for me. I mean yea I love a good greasy burger and a some great comfort food, but sometimes I like something a little bit lighter and that is a little better for my all around. That said, this is the perfect recipe for that. The wife and I love to have this Coconut Shrimp with Tropical Rice and sit out on the deck and eat dinner during the summer. You know a little bit if fresh air a nice light meal and good company sometimes those things fit summer even better than a grilled burger.

Coconut Shrimp w/ Tropical Rice Recipe
Ingredients
- 3/4 Cup Coconut Water
- 3/4 Cup Rice
- Lime Zest
- 1/2 Cup Carrot
- 2 Tbsp. Red Onion
- Salt
- Pepper
- 1 lbs. Large Shrimp
- 1 Large Egg
- 1 Cup Sweetened Shredded Coconut
- 3/4 Cup Panko Breadcrumbs
- 2 Tbsp. Cilantro
