Healthy Chipotle Lime Shrimp Taco w/Strawberry Salsa Recipe
Ingredients
Chipotle Lime Shrimp
- 1 lbs. Raw Shrimp
- Juice of 2 Limes
- 2 Garlic Cloves Minced
- 3 Tbsp. Extra Virgin Olive Oil
- 1 Tbsp. Adobo Sauce from a can of chipotle chile peppers in adobo sauce
- 1 tsp. Lime Zest
- Salt
- Pepper
- 8 Corn Tortillas Warmed
- 1/2 Cup Coleslaw Mix
- 4 oz. Cotija Cheese
Strawberry Jalapeño Salsa
- 8 oz. Fresh Strawberries Chopped
- 1/2 Red Onion Diced
- 2 Jalapeño Peppers Seeded and Diced
- 1/4 Cup Fresh Cilantro Chopped
- Juice of 1 Lime
- Salt
- Pepper
