What’s up guys? It’s Friday, I am sooo glad this week is over lol. Now for a week off! Anyway, I haven’t done a good breakfast recipe in a long time so here you go some Huevos Rancheros Burritos! This is a fun twist on a breakfast burrito. Nothing too difficult and comes out really freaking good. Add onto that the fresh salsa and this one kills it. This is one of those breakfast that my son sat down and actually ate with me when I was done filming. Anything that gets him to sit down with Dad is a 100% winner in my book lol. Huevos Rancheros Burritos Recipe
Ingredients
- 6 Tomatoes
- 1/2 Red Onion Diced
- 1 Jalapeno Seeded & Diced
- 3 Garlic Cloves Minced
- 1/2 Cup Cilantro Chopped
- 1 Limes Juice
- Salt to taste
- Cayenne to taste
Burritos:
- 8 oz. Chorizo
- 8 Eggs
- 1/3 Cup Milk
- 1 Cup Mexican Cheese Blend Shredded
- 15 oz. Black Beans Rinsed & Drained
- Avocado
Instructions
- Mix all the ingredients for the salsa together in a medium bowl, set aside and allow to rest. In pan/skillet cook and break up chorizo, once down drain excess grease and set aside.In small bowl whisk together eggs, milk. Heat pan/skillet and melt 1 Tbsp. of butter in pan. Cook eggs all the through, salt and peppering them to taste.Place several Tbsp. of Eggs, Chorizo, and Bean in center of the tortilla. Top with cheese. Fold one end of burrito over contents, fold in the two sides and finish rolling. In same pan/skillet, melt 1 Tbsp. of butter, place rolled burritos in pan one at a time. Cook on all sides until golden brown.Top with fresh salsa and sliced avocado and serve!
