Jalapeño Popper Breakfast Casserole

One of the two things I wanted to do more of in 2019 in Breakfasts, (the other is Puerto Rican Cuisine) so I am buckling down and doing exactly that. Today I am doing a Jalapeño Popper Breakfast Casserole . This is a really quick and simple breakfast recipe that is super easy to customize. The amount of spice, or even tweaks on anything you may want in it. This is one though even as simple as I present it will totally be LOVED by any one you make for. Best yet it doesn’t take long to make a lot of food to feed the whole family. So go ahead and give this one a try, when you do make sure to take a pic and post it to my Facebook page.

Jalapeño Popper Breakfast Casserole

Total Time 55 minutes
Course Breakfast
Cuisine American
Servings 10 Servings

Ingredients
  

  • 12 Eggs
  • 1 Cup Heavy Cream
  • 1 Cup Cheddar Cheese Shredded
  • 4 Jalapeños Sliced
  • 1/2 lb. Bacon Cooked and Chopped
  • 4 oz. Cream Cheese
  • Salt
  • Pepper

Instructions
 

  • Pre-heat oven to 350˚.
  • In large bowl beat together eggs, cream, 1/2 cup cheddar, salt and pepper.
  • Pour mixture into a 9 x 13baking dish.
  • Drop chunks of the cream cheese through out the egg mixture.
  • Slice your Jalapeños (seed them first if you want less heat) and sprinkle them across the top of the casserole.
  • Bake for 35 minutes.
  • Remove from the oven and top with remaining cheese and back. Put back into the oven and back another 10 minutes.
