Loaded Baked Potato Gnocchi

What’s up, everyone! It’s Friday the 13th, but there’s nothing scary about this dish! Tonight, I’m making Loaded Baked Potato Gnocchi – soft, pillowy gnocchi smothered in an awesome cheesy sauce, topped with crispy bacon, green onions, and a dollop of sour cream. Cheesy Loaded Baked Potato Gnocchi!!

Ingredients
  

  • 4 Cups Potato Gnocchi
  • 1/4 Cup Butter
  • 1/3 Cup Flour
  • 3 Cups Milk
  • 2 Cup Sharp Cheddar Cheese Shredded
  • Salt
  • Pepper
  • 2 Tbsp. Green Onion Chopped
  • 1/8 tsp. Garlic Powder
  • 1/3 Cup Sour Cream
  • 4 Slices Bacon Cooked and Crumbled

Instructions
 

  • Prepare the Gnocchi per the package instructions.
  • Preheat your oven to 350˚F. In a large sauce, melt the butter over a medium heat. Whisk in the flour and continue to whisk allowing to cook for about 2 minutes.
  • Add in the milk a little at a time whisking constantly. Allow to cook for about 8 to 10 minutes stirring frequently until it begins to thicken up.
  • Remove from the heat and add in the cheese, salt, pepper, green onion, and garlic powder. Stir until the cheese is melted and all ingredients are completely incorperated.
  • Stir in the sour cream, and then add in the cooked gnocchi. Mix together until gnocchi is completley coated.
  • Transfer to a baking dish, top with some additional shredded cheese. Bake for about 30 minutes until the cheese is completely melted.
  • Add the bacon and some extra green onion and serve!
