It’s the weekend, well Saturday to be specific you know that that means! Well I mean other than not having to go into work today I mean lol. It means it’s time for another AWESOME Pancake recipe. Today I am making some Mint Chocolate Chip Pancakes. This one is one that gets made a lot in this house between my wife and my daughter. So I was told I have to drop it in to the rotation and make a post for it so they could have an excuse for me to make them lol. I mean really this is a classic flavor pairing that lends itself so well to the simplest of breakfasts, the pancake lol. I mean come on who doesn’t like mint chocolate chip ice cream right? Mint Chocolate Chip Pancakes Recipe
Ingredients
- 1-1/3 Flour
- 1 Tbsp. Sugar
- 1 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1 Cup Buttermilk
- 2 Tbsp. Butter Melted
- 1 Egg
- 1/2 tsp. Vanilla
- 1/2 tsp. Mint Extract
- 3/4 Cups Chocolate Chips
- 3-4 Drops Green Food Coloring
- Salt
Instructions
- Whisk together flour, sugar, baking powder, baking soda, and salt into a bowl.
- Whisk together buttermilk, egg, butter, extracts, and food coloring in a small bowl. Add to dry ingredients and stir until incorporated. Stir in chocolate chips.
- Heat a large nonstick skillet or griddle over medium heat. Spread 1/2 tablespoon of butter on the hot skillet. Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook for 1 to 2 minutes, until bottom is golden brown and edges begin to bubble, then carefully flip and cook for 1 to 2 minutes more. Transfer to plates. Repeat with remaining batter.
- Serve warm with whipped cream, vanilla ice cream, hot fudge sauce, and more chocolate chips, if desired. Makes about 12 pancakes.
