How was everyone’s weekend? If you guys know me I am a comic book and pro wrestling nerd and got to hang out at a wrestling show this weekend. Made it a great weekend to be back out there and having a good time. Anyway enough of all of that. On to the important part.. the FOOD lol today I am making some Oven Baked Cajun Popcorn Chicken! Now when ever I do an oven baked popcorn chicken I am always asked why I use crushed corn flakes instead of like bread crumbs. Well the corn flakes allow it to be crispy as if it was fried with out well the frying lol. Oven Baked Cajun Popcorn Chicken Recipe
Ingredients
Chicken:
- 2 lb. Chicken Breasts Cubed
- 1/2 Cup Buttermilk
- 2 Cups Corn Flakes Finely Crushed
- 2 Tbsp. Flour
- 2 Tbsp. Cajun Seasoning
- 1/2 Cup Cheddar Cheese Shredded
- Salt
- Pepper
Honey Mustard:
- 1/4 Cup Dijon Mustard
- 1/4 Cup Honey
- 1/4 Sour Cream
- 2 Tbsp. Olive Oil
- 1/2 Lemons Juice
- 1 Tbsp. Cajun Seasoning
- 1/4 tsp. Cayenne
- Salt
- Pepper
Instructions
- Preheat your oven to 375˚.
- Place your chicken in a large bowl and coat it in your buttermilk and set it aside.
- In a separate bowl add in cornflakes, flour, cajun seasoning, cheddar, salt and pepper then stir to combine.
- Remove chicken from the buttermilk and coat in the corn flakes breading. Place onto a baking sheet, and bake for 15 to 20 minutes until chicken is cooked all the way through.
- While the chicken is cooking mix all the honey mustard ingredients into a small bowl.
- Once chicken is done serve with dipping sauce.
