Oven Baked Cajun Popcorn Chicken Recipe

Ingredients
  

Chicken:

  • 2 lb. Chicken Breasts Cubed
  • 1/2 Cup Buttermilk
  • 2 Cups Corn Flakes Finely Crushed
  • 2 Tbsp. Flour
  • 2 Tbsp. Cajun Seasoning
  • 1/2 Cup Cheddar Cheese Shredded
  • Salt
  • Pepper

Honey Mustard:

  • 1/4 Cup Dijon Mustard
  • 1/4 Cup Honey
  • 1/4 Sour Cream
  • 2 Tbsp. Olive Oil
  • 1/2 Lemons Juice
  • 1 Tbsp. Cajun Seasoning
  • 1/4 tsp. Cayenne
  • Salt
  • Pepper

Instructions
 

  • Preheat your oven to 375˚.
  • Place your chicken in a large bowl and coat it in your buttermilk and set it aside.
  • In a separate bowl add in cornflakes, flour, cajun seasoning, cheddar, salt and pepper then stir to combine.
  • Remove chicken from the buttermilk and coat in the corn flakes breading. Place onto a baking sheet, and bake for 15 to 20 minutes until chicken is cooked all the way through.
  • While the chicken is cooking mix all the honey mustard ingredients into a small bowl.
  • Once chicken is done serve with dipping sauce.
