Preheat your oven to 375˚.
Place your chicken in a large bowl and coat it in your buttermilk and set it aside.
In a separate bowl add in cornflakes, flour, cajun seasoning, cheddar, salt and pepper then stir to combine.
Remove chicken from the buttermilk and coat in the corn flakes breading. Place onto a baking sheet, and bake for 15 to 20 minutes until chicken is cooked all the way through.
While the chicken is cooking mix all the honey mustard ingredients into a small bowl.
Once chicken is done serve with dipping sauce.
