Puerto Rican Sopa de Pollo

Dad came over this weekend so you know what that means!! Time for some Puerto Rican food. This is always fun since I get to expose my wife and kids to a little bit of my cuisine/heritage. Today we do the Puerto Rican take on Chicken Soup or Sopa de Pollo… which my wife and kids almost didn’t get any because Dad was busy killing it. ( You can see him over my shoulder in the video waiting on the food =) lol)

Sopa de Pollo / Puerto Rican Chicken Soup Recipe

Total Time 1 hour 15 minutes
Servings 12 Servings

Ingredients
  

  • 2 Chicken Breasts
  • 3 Chicken Thighs skinned and de-boned
  • 4 Garlic Cloves
  • 2 Potatoes cut in large chunks
  • 3 Carrots peeled and chopped
  • Cilantro
  • 1/2 Cup Sofrito
  • 1 tsp. Oregano
  • 2 Tbsp. Chicken Bouillon
  • 1 Packet Sazon
  • Noodles
  • 10 cups water

Instructions
 

  • Skin and de-bone your chicken and cut it into small chunks. Bring water to a rolling boil on your stove top and add the chicken into it, I add the bones from the thighs also to give it that extra flavor. Let the chicken cook on a low heat for about 45 minutes.
  • Stir in your garlic, carrots, cilantro, sofrito, oregano, bouillon, and sazon allow to cook for another 10 – 15 minutes and then add your potatoes (you don’t want them to over cook and turn into a mush) allow this to go for another 10 -15 minutes.
  • Stir in your noodles and allow to cook for about another 5 or so minutes until the noodles are soft.

Allow it cool off and then serve you have the perfect Sopa de Pollo… and for those who have never tried Puerto Rican food this is the perfect time to dip your tows into the water as Chicken soup is universal this one just has hints of Puerto Rican flavors.
