Dad came over this weekend so you know what that means!! Time for some Puerto Rican food. This is always fun since I get to expose my wife and kids to a little bit of my cuisine/heritage. Today we do the Puerto Rican take on Chicken Soup or Sopa de Pollo… which my wife and kids almost didn’t get any because Dad was busy killing it. ( You can see him over my shoulder in the video waiting on the food =) lol)

Sopa de Pollo / Puerto Rican Chicken Soup Recipe
Ingredients
- 2 Chicken Breasts
- 3 Chicken Thighs skinned and de-boned
- 4 Garlic Cloves
- 2 Potatoes cut in large chunks
- 3 Carrots peeled and chopped
- Cilantro
- 1/2 Cup Sofrito
- 1 tsp. Oregano
- 2 Tbsp. Chicken Bouillon
- 1 Packet Sazon
- Noodles
- 10 cups water
Instructions
- Skin and de-bone your chicken and cut it into small chunks. Bring water to a rolling boil on your stove top and add the chicken into it, I add the bones from the thighs also to give it that extra flavor. Let the chicken cook on a low heat for about 45 minutes.
- Stir in your garlic, carrots, cilantro, sofrito, oregano, bouillon, and sazon allow to cook for another 10 – 15 minutes and then add your potatoes (you don’t want them to over cook and turn into a mush) allow this to go for another 10 -15 minutes.
- Stir in your noodles and allow to cook for about another 5 or so minutes until the noodles are soft.
