Man! What a freaking cold week lol. Buzz word of the week Polar Vortex lol. Anyway here we are this weekend is the Super Bowl! I mean come on that’s a food holiday lol. We invite people over and make tons of awesome appetizers and finger foods. I love.. no wait I LOVE the Super Bowl for this reason ( I mean my team isn’t there so at least I have the food lol). So with that in mind I am throwing down with some amazing Steak Nachos you guys will love. these are a quick and simple recipe that will elevate your nacho game for the big day. Steak Nachos Recipe
Ingredients
- 1 lb. Rib Eye Steak
- 2 Cups Mexican Blend Cheese Shredded
- 1-1/2 Cups Corn
- 2 Tbsp. BBQ Sauce
- 1 Tbsp. Spicy Steak Rub
- 1 Can Pinto Beans Drained & Rinsed
- 1 Bag Tortilla Chips
Instructions
- Drizzle oil on both sides of steak, then coat with your favorite spicy steak rub and pat into steak.
- Heat a little oil in a pan/skillet, cook steak for about 4-5 minutes on each side. When finished remove from pan and let rest.
- Pre-heat oven to 375˚.
- While steak rests cook corn in same pan and cook until browned.
- Cut steak into bite sized chunks, and toss in BBQ sauce.
- Cover the bottom of baking tray or cast iron skillet with tortilla chips. Then place cut steak on top of chips, pinto beans and lastly cheese.
- Bake in oven until cheese is melted about 8-10 minutes. Add any toppings you want i.e. more BBQ Sauce, Jalapeno, Cilantro, Avocado.. etc..
