Strawberry Shortcake Bars

It’s time again for another tasty summer time treat. What better for the summer than some nice fresh strawberries. Those are the perfect base for a dessert. With strawberries as my base I figured why not make my Strawberry Shortcake Bars! I have made these a number of times for work picnics and they have been destroyed every single time. I will say this though they almost didn’t make it out of my house lol. That great tasting short cake is the perfect texture and OMG does it just hit the sweet spot =) So go ahead guys dig in and give this one a try I know there is no way you would end up disliking it! Heck you will love it!

Strawberry Shortcake Bars Recipe

Prep Time 3 hours 20 minutes
Cook Time 20 minutes
Total Time 3 hours 40 minutes
Servings 8

Ingredients
  

CAKE

  • 1/2 Cup Butter softened
  • 1 Cup Sugar
  • 2 Eggs
  • 1 tsp. Baking Powder
  • Salt
  • 1-1/2 Cup Flour
  • 3/4 Cup Milk
  • 1 tsp. Vanilla
  • 1 Pint Strawberries

FROSTING

  • 8 oz. Cream Cheese
  • 1/2 Cup Powdered Sugar
  • 8 oz. Frozen Cool Whip

Instructions
 

  • Pre-Heat oven to 350 degrees.
  • In large bowl, beat together sugar and butter until creamy. Mix in Eggs, baking powder and salt. Alternate between adding in the flour and milk beating after each addition. Add Vanilla and stir until completely combined.
  • Pour batter into greased and floured 9×13 baking dish, and bake for 15-20 minutes.
  • Test with a tooth pick. When it comes out clean set cake aside and allow to cool.
  • In large bowl, cream together, Cream Cheese, Powdered Sugar and whipped topping. Evenly spread mixture over the top of the cooled cake.
  • Dice strawberries and use them to top frosting.
  • Refrigerate for three hours.
  • Slice and serve!
