One thing we really love in this house is breakfast. So what is one of my favorite ways to eat breakfast? Well wrapped in a freaking burrito!! What makes that even better? Wrap that freakin’ burrito in BACON! Well you know bacon makes everything better. So if I am going to make a breakfast burrito why would I start with something small… nope we are jumping straight into the deep water on this one lol I am making my Ultimate Breakfast Burrito! This is breakfast to the nest level, steak, eggs, hash browns, bacon… mmmmmmm bacon lol. So if you are ready for a hearty filling great tasting breakfast this is the PERFECT recipe for you to give a try.

Ultimate Breakfast Burrito Recipe
Ingredients
- 1 lb. Skirt Steak
- 16 oz. Hash Browns
- 1-1/2 Cup Cheddar Cheese Shredded
- 1 Onion Diced
- 1/2 Cup Salsa
- 6 Eggs Beaten
- 6 Large Tortillas
- 12 Bacon Strips
- Salt
- Pepper
Instructions
- Heat olive oil in medium pan over a medium-hi heat. Once oil is hot begin sautéing onions. After a couple minutes ad the hash browns in cook into golden brown and starting to crisp. About 4-5 minutes on each side.
- Add in beaten eggs, salt and pepper and mix together, allow eggs to cook for a couple of minutes and add in cheese. Lower heat and allow cheese to melt. remove filling and set aside.
- Wipe pan out, re-coat with a little oil, and cook up skirt steaks to your desired temperature.
- Lay out tortilla, spread a couple of tablespoons of hash brown and egg mixture. Add a tablespoon of salsa. Next layer it with sliced skirt steak.
- Roll the burrito by folding the sides in, then begin to roll tortilla tightly. Once tightly rolled wrap in bacon.
- warm pan over low heat and cook bacon until crispy, slowly turning it. That should cook for about 15 minutes.
