Heat olive oil in medium pan over a medium-hi heat. Once oil is hot begin sautéing onions. After a couple minutes ad the hash browns in cook into golden brown and starting to crisp. About 4-5 minutes on each side.
Add in beaten eggs, salt and pepper and mix together, allow eggs to cook for a couple of minutes and add in cheese. Lower heat and allow cheese to melt. remove filling and set aside.
Wipe pan out, re-coat with a little oil, and cook up skirt steaks to your desired temperature.
Lay out tortilla, spread a couple of tablespoons of hash brown and egg mixture. Add a tablespoon of salsa. Next layer it with sliced skirt steak.
Roll the burrito by folding the sides in, then begin to roll tortilla tightly. Once tightly rolled wrap in bacon.
warm pan over low heat and cook bacon until crispy, slowly turning it. That should cook for about 15 minutes.
