Cook tater tots per package instructions.
Preheat your oven to 375˚.
In a large bowl mix together the chicken, buffalo sauce, green onion, salt and pepper.
In a small pan add 1 cup of cheddar cheese sprinkle on cornstarch mix until cheese is coated. Add in evaporated milk, heat over a low flame until completely melted and begins to thicken.
Place cooked tater tots in a baking dish, top with cheese sauce, buffalo chicken, and the remaining cheddar cheese. Bake for about 5 to 10 minutes, long enough for the cheese to melt.
Top with crumbled bacon and ranch dressing and serve.
