Cheesy Breakfast Skillet Recipe

Ingredients
  

  • 4 English Muffins Halved
  • 5 Bacon Slices Cooked & Crumbled
  • 3 Eggs
  • 2 Cups Milk
  • 2 Cups Cheddar Cheese Shredded
  • 1/3 Cup Green Onion Chopped
  • 4 oz. Diced Pimentos Drained
  • 2 Tbsp. Thyme
  • 1 Tbsp. Spicy Brown Mustard
  • 1 tsp. Hot Sauce
  • Salt
  • Pepper

Instructions
 

  • Pre-Heat oven to 350˚.
  • Cut English muffins in half and place them on a caking sheet. Toast for 15 minutes until they are crispy.
  • In medium bowl beat eggs. Add in the milk mixing until combined. Add in pimentos, mustard, hot sauce, green onions, thyme, salt and pepper to taste. Also add in 1-1/2 Cups of cheddar cheese. 
  • Lay toasted english muffins in 9" cast iron skillet. Pour egg mixture over muffins. Add crumbled bacon and remaining cheese. 
  • Cover with a piece of tin foil and bake for 20 minutes. Remove foil and allow to cook for another 15 minutes. Allow to rest for 5-10 minutes and serve!
