Cut English muffins in half and place them on a caking sheet. Toast for 15 minutes until they are crispy.
In medium bowl beat eggs. Add in the milk mixing until combined. Add in pimentos, mustard, hot sauce, green onions, thyme, salt and pepper to taste. Also add in 1-1/2 Cups of cheddar cheese.
Lay toasted english muffins in 9" cast iron skillet. Pour egg mixture over muffins. Add crumbled bacon and remaining cheese.
Cover with a piece of tin foil and bake for 20 minutes. Remove foil and allow to cook for another 15 minutes. Allow to rest for 5-10 minutes and serve!
