In large bowl mix Chorizo and all the burger ingredients, until evenly combined.
Cover with clastic wrap and place in the fridge for at least an hour.
Peel, devein and rinse shrimp. Pat dry with a paper towel and place them in a medium bowl.
Add in all of shrimp ingredients and coat the shrimp thoroughly, cover and place in fridge for 30 minutes.
In small bowl mix, Mayonnaise, tomato paste, paprika, mustard and lime juice. Mix until completely combined to make the Paprika Mayo.
After 1 hour divide chorizo into 4 patties. Heat a little oil in a pan over medium heat. Two at a time place the burger patties into the heated oil. Allow the burgers to completely brown before flipping over. Sprinkle each patty with shredded cheese, cover and allow to finish cooking.
Once burgers are done do NOT clean the pan leave the Chorizo grease in there. Add the shrimp in and allow to cook for a minute of two on each side.
To assemble spread Paprika Mayo on the bottom bun, then add chorizo patty, top with shrimp close it up and enjoy!
