Boil potatoes for about 45 minutes. Remove from heat, drain water and allow potatoes to cool.
Slice potatoes in half. Using a spoon scoop out each potato, hollowing it out completely.
In pan on stove top or a fryer, heat oil to 375 degrees. Fry hollowed out potatoes for 2-3 minutes it doesn't take long for them to become crispy and a nice golden brown. Pull out of oil and place on paper towels to allow them to dry.
Heat your oven to 350 degrees. Place potatoes on a baking sheet, fill each with cheese and bacon. Place int he oven, they don't need to be in for long you just need to melt the cheese.
