Wash and quarter your potatoes, place them in a pot cover with water and boil for about 10 to 15 minutes. Until potatoes are tender enough to pierce with a fork, then drain.
Place potatoes in a large bowl and sprinkle with apple cider vinegar and Creole seasoning, toss until coated.
In a small bowl mix together Mayonnaise, sour cream, mustard and sugar. Once combined pour over the potatoes.
Add the rest of the ingredients together and allow to chill until ready to serve.
