Deep Fried Spicy Potato Salad Recipe

This is one of the BEST potato salads out there.... PERIOD!
Servings 10 Serves

Ingredients
  

  • 6 Russet or Yukon Potatoes
  • 2 Hard Boiled Eggs, Chopped
  • 1/2 Bell Pepper, Chopped
  • 1/3 Cup Mayonnaise
  • 1/3 Cup Sour Cream
  • 1/4 Cup Franks Red Hot
  • 1/4 Cup Green Onion, Chopped
  • 1 Jalapeno, Seeded and Diced
  • 1 Tbsp. Sugar
  • 4 Bacon Slices, Cooked and Crumbled
  • Salt
  • Pepper

Instructions
 

  • Heat oil to 375 degrees, while oil is heating cut potatoes into small bite size pieces. Fry potatoes for about 5 minutes until they get a nice golden brown color. Drain and allow the potatoes to cool.
  • hile the potatoes are cooking, whisk together the mayo, sour cream, bacon, hot sauce, sugar and black pepper.
  • Stir in the remaining ingredients, including the potatoes.
  • Top with additional green onions and a pinch of cayenne pepper or paprika for color if desired.
