Deep Fried Spicy Potato Salad Recipe
This is one of the BEST potato salads out there.... PERIOD!
- 6 Russet or Yukon Potatoes
- 2 Hard Boiled Eggs, Chopped
- 1/2 Bell Pepper, Chopped
- 1/3 Cup Mayonnaise
- 1/3 Cup Sour Cream
- 1/4 Cup Franks Red Hot
- 1/4 Cup Green Onion, Chopped
- 1 Jalapeno, Seeded and Diced
- 1 Tbsp. Sugar
- 4 Bacon Slices, Cooked and Crumbled
- Salt
- Pepper
Heat oil to 375 degrees, while oil is heating cut potatoes into small bite size pieces. Fry potatoes for about 5 minutes until they get a nice golden brown color. Drain and allow the potatoes to cool.
hile the potatoes are cooking, whisk together the mayo, sour cream, bacon, hot sauce, sugar and black pepper.
Stir in the remaining ingredients, including the potatoes.
Top with additional green onions and a pinch of cayenne pepper or paprika for color if desired.
