Green Chili Chicken Burritos Recipe

Ingredients
  

Burritos:

  • 3 Cups Chicken Cooked & Shredded
  • 1-1/2 Cups Salsa
  • 1-1/4 Cup Cheddar Cheese Shredded
  • 1-1/2 tsp. Cumin
  • 1/2 tsp. Oregano
  • 2 Green Onions Chopped
  • 6 - 8 " Tortillas

Green Chili Sauce:

  • 2 Cups Chicken Broth
  • 1/2 Cup Sour Cream
  • 1/3 Cup Cheddar Cheese Shredded
  • 3 Tbsp. Butter
  • 3 Tbsp. Flour
  • 1/2 tsp. Garlic Minced
  • 1/2 tsp. Cumin
  • 1/2 tsp. Oregano
  • 4 oz. Mild Green Chilis Chopped
  • Salt
  • Pepper

Instructions
 

  • Preheat your oven to 375˚.
  • In large bowl mix together chicken, salsa, cumin, oregano, cheese and green onions.
  • Divided the chicken mixture between the tortillas. Fold the sides of the tortillas and roll to form the burritos. Place in a baking dish seam side down.
  • Spray lightly with olive oil and bake for about 25 minutes.
  • While burritos are baking melt butter in a small sauce pan. Once melted add the flour in and allow to bubble for about a minute/
  • Add garlic and cook until fragrant, then gradually whisk in the chicken broth.
  • Once completely combined stir in cumin, oregano, salt and pepper. Cook until thickened.
  • Remove from heat and stir in green chilies, cheese, and sour cream.
  • Remove burritos from the oven, pour sauce over the burritos and top with shredded cheese, and place in broiler for about 2-3 minutes.
