In a large bowl whisk together the flour, baking powder, baking soda, salt, pepper, and garlic powder. In a second bowl combine the buttermilk, egg and hot sauce. Place the chicken in the buttermilk mixture and make sure it is completely covered.
One breast at a time dredge them through the flour mixture and add into your heated oil and fry for about 5 to 7 minutes until the chicken is cooked all the way through and is a nice golden brown.
While the chicken is cooking we can start on the gravy. In a sauce pan add the butter and allow it to melt down over a medium heat. Whisk in the flour and allow to cook for about 1 minute. Slowly whisk in the milk until it is completely combined. Bring it to a boil, turn down the heat and allow it to simmer to thicken up. Remove from the heat and salt and pepper to taste.
