Pre-Heat oven to 350˚.
Cut each chicken breast in half length wise so you have 4 thin breasts.
Combine 1 Cup Parmesan, bread crumbs, and half of basil in a shallow bowl. In a second bowl whisk together eggs & water. Place flour on a plate.
Coat each chicken breast in flour, then coat in the egg mixture, and lastly coat in the breadcrumbs.
Heat olive oil in your skillet. Place breaded chicken in hot oil and allow to cook on each side for about 3 minutes. Remove all the chicken and place on a plate.
Add about half of the tomato sauce to the hot skillet. Place Chicken back into the pan, make sure there is no overlap.
Cover in the remaining tomato sauce, place sliced mozzarella over each chicken breast. Sprinkle with remaining parmesan and basil.
Bake for 30 minutes and this one is all set.
